Sure, we use our indoor grill pans year-round, but that doesn’t compete with the summer vibe that occurs when you’re outside, cooking over a real fire. These are our all-time favorite recipes and our new favorite grill.

GRILL

If you’re used to cooking on the gas grill, it will take a minute to get used to cooking over an open fire, but it’s worth it. That intense and constant heat cooks truly succulent foods and adds a deep smoky touch to both meat and vegetables. This portable grill is a great place to start as it doubles as a brazier on cool nights when grill isn’t on the menu, but cozy is. When you’re cooking, play around with the position of the grill grate – it attaches to a pole so you can adjust how close or far from the fire. If the grill is further away, it means a slower and longer cook. Closer to the flames is for hot and fast cooking. Or make a combination: put some charcoal in your food first, then adjust and move the rack up for milder heat and constant exposure to smoke for flavor.
