Chicken breasts marinated in yogurt

Ingredients

  • 4 boneless chicken breasts

MARINADE

  • 1 cup plain yogurt
  • 2 cloves garlic, chopped
  • 1 tbsp of Dijon mustard
  • 1 tbsp chopped fresh ginger
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tsp ground paprika
  • 2 lemons, for juice and zest
  • Salt and pepper

VEGETABLES

  • 2 red peppers cut into quarters (seeded)
  • 2 yellow peppers cut into quarters (seeded)
  • 2 cups green zucchini, cut into sections (1 inch)
  • 1 large onion cut in slices (1-inch)

DRESSING

  • 1/4 cup olive oil
  • 2 tbsp of balsamic vinegar
  • 1 tbsp fresh oregano, chopped
  • 1 tbsp of chopped garlic
  • 1 lemon for juice and zest
  • Salt and pepper

Preparation

  • In a bowl, mix all the ingredients for the marinade and put the chicken to marinate for 45 minutes.
  • Preheat the barbecue to high heat.
  • Coat the vegetables with oil, season with salt and pepper, then put them in a basket to cooking. Grill on each side on the barbecue.
  • Cook the chicken on the other portion of the barbecue.
  • For the dressing, combine all the ingredients in a bowl and pour over the grilled vegetables. Mix and season to taste.
  • Serve chicken on a bed of warm vegetable grilled.
