The Christmas Spice Crown is the confection of the pastry chef of the Hotel Lutetia Paris Rive Gauche Nicolas Guerico. It is composed of a very light lemon mousse combined with a flowing caramel with Christmas spices, all topped with Madagascan vanilla. Add a soft caramel cookie and a crunchy lemon and cinnamon. A praline ganache with spices and dark chocolate shavings sublimate the log. Its openwork base is 64% Manjari chocolate. Finally, the log was decorated with small white chocolate Christmas balls. 85 €.
