Club le Silencio had opened a pop-up restaurant which, having had to close, became Le Silencio at home. For the 2020 end-of-year celebrations, Mathieu Rostaing-Tayard, guest chef of the Silencio pop-up, has developed a special menu for the 2020 end-of-year celebrations.
<p><strong>Mathieu Rostaing-Tayard</strong>, is the first <strong>chef</strong> guest of <strong>Silencio pop-up</strong>, the<strong> ephemeral restaurant</strong> in <strong>takeaway</strong> et en <strong>delivery</strong>, launched by the Le Silencio club. <br/>For the <strong>Christmas and New Year</strong>, of <strong>December 23, 2020 to January 2, 2021</strong>, the chef created a new <strong>menu, festive</strong>, especially for this period.
here is the holiday menu of Mathieu Rostaing-Tayard for the Silencio at home :
Shellfish in green butter (mussels, clams, black scallops, knives, cockles)
Smoked fish, citrus and chilli condiment, saffron pickles, cereal bread tile
Cream of golden cauliflower, porcini oil, bottarga
Braised beef cheek in red wine, squash gnocchi, fresh black truffle, hazelnuts, cheese
Shortbread with spices, chestnut cream, chocolate with fresh bay leaf
This menu at 58 euros per person is at commander, at the latest, the day before at 6 p.m., then to come pick up on site, at 22 rue Guillaume Apollinaire in the 6th arrondissement. It is also available in delivery.
Mathieu Rostaing-Tayard has also provided a variation vegetarian of his holiday menu at 48 euros.
To accompany this menu, the sommelière Honney Spencer has selected champagnes and natural wines.
And, to start the evening off right, with an aperitif, the chef also offers a cream of roots, citrus fruits, sesame and polenta chips.
